Many years later, I fulfilled this crazy dream. I met someone who offered me the opportunity to immerse a few hundred bottles of my wine in an oyster farm. They lay there for a year.

 

On their return, the comparative tasting was quite a surprise! The wine, lulled by the tide, had both aged and rejuvenated! Like an aged wine, it was smoother on the palate with softer tannins and a far more complex range of aromas. Like a young wine, it had a more refreshing fruity taste and the colour was brighter.

These wines cradled by the

 

tides became a beautiful and fortunate contradiction.

I soon had the idea of sharing this surprising experience with all those who love my wines...
